Turn around and sit facing the toilet tank — especially helpful with big skirts or trains. This prevents the fabric from bunching up behind you or dipping into the bowl.
If you're comfortable, ask a bridesmaid or your maid of honor to help lift your dress. They can stand outside the stall and hold it up discreetly.

Slip your dress into a large reusable IKEA bag or a special “bridal bathroom helper” harness (yes, they exist!). Cut a hole in the bottom of the bag, step in, and use the straps to pull your dress up and keep it bunched at your waist — hands-free.
Try going to the bathroom in your dress (or a similar one) during a fitting or at home to test your strategy in advance.
